"How to butterfly a baitfish"



 
Start by taking a whole baitfish and fileting it from the tail to the pectoral fins. Do this on both sides and be careful not to over cut beyond the pectoral fins or smash the filets.

 
Each side of the filet should look like the picture above. Notice that the filet does not go past the pectoral fin.  This is important because the vital organs are just beyond the pectoral fins and this will add more scent into the water.



 
Now you should have something that looks like this picture. The last thing you need to do is to remove the spine. You do this by holding the head of the fish firmly and twisting the spine off the fish as close to the head as possible. Do not discard the bones, these can be ground up and used for chum at a later date. Simply freeze this portion and use at your discretion.


 
You should have something that looks like this. Notice the internal parts of the fish  (red part in the center near the head) ?  That's your scent trail ( vital organs)  besides the filets itself. All that is left is to add a knocker rig or a plain hook to the nose of the bait and cast it out.


The fish above was used as an example, you can do this with any baitfish for any fishing application.  Slow troll, jety fishing in current, use as a chum for sharks by hanging the butterflied bait over the rail...the possibilities are endless.  My favorite use is with a finger mullet or a pin fish under a balloon rig or similar for sharks, mackeral and Barracudas but that's just me.
